100% Negroamaro, sapling, 90 quintals per hectare. The Metiusco rosato is processed with the bleeding technique: once the grapes are processed, the crushed grapes are brought to cryomaceration for a period ranging from 15 to 20 hours, after which they are extracted from the bottom of the tank and in a reduced environment only the 30% of the must.
A temperature-controlled fermentation follows.
Visual test: bright peach blossom color wine, limpid, transparent, with rose petal reflections and medium consistency.
Olfactory examination: wine of good intensity and complexity, elegant, fairly persistent, fine, fairly broad, with fruity hints of fresh cherry and strawberry jelly and secondary floral notes of dog rose. There are also hints of pink grapefruit zest.
Gustatory Analysis: dry wine, of good freshness, fine, of good persistence and intensity and of good balance. It is a soft, harmonious and good alcoholic wine.
On the palate in the aftertaste phase there are sensations of red fruits.
Serve at 10 ° in white glasses that close towards the medium-sized nose.
It goes well with dishes such as floured red mullet fillets cooked in extra virgin olive oil accompanied by sautéed potatoes and cherry tomatoes
Bianco
Verdeca, Malvasia Bianca, espalier, 90 quintals per hectare. We use the two most common autochthonous varieties, expertly balanced to enhance their characteristics. Verdeca for acidity, flavor and freshness, malvasia is overripe in the vineyard, and then in the cellar it works in battonage to increase structure and fruit. Both varieties ferment in steel and at a controlled temperature. The blend of raw wines is processed in reduction.
Visual test: wine with a straw yellow color with a greenish hue, limpid, transparent and with a good consistency in arches.
Olfactory Analysis: intense and very fine wine with fruity hints of citrus, yellow fruit, lemon peel, mint and brackish notes of Mediterranean scrub, lavender and thyme.
Gustatory Analysis: dry wine, fresh in acidity, quite savory, with good persistence and complexity, aromatic and overall balanced.
Serve at 10 ° -11 ° in white wine glasses that close towards the medium-sized nose.
It goes well with raw fish and fish with delicate cooking, crustaceans and molluscs in general or dishes such as omelette with gianchetti or raw shrimp tartare.

Rosso - Aleatico
Negroamaro, Malvasia Nera di Lecce, Primitivo, espalier and sapling, from 70 to 100 quintals per hectare. With three different harvest periods and three autonomous vinifications, the new blend is immediately bottled and put on the market from the very first months of life. Fresh, fruity, elegant, easy to drink, but very structured and intense: a wine suitable for the most daring combinations.
Visual test: wine of a quite intense ruby red color, limpid, with garnet reflections and rich in thick and dense arches.
Olfactory Analysis: quite intense, fine, fairly broad wine, with fruity hints of dried plum and cherry in alcohol, ethereal and slightly aromatic notes of myrtle, cocoa powder and Mediterranean scrub.
Gustatory Analysis: dry wine, pleasantly fresh, soft, warm, velvety and ample, with a good persistence and complexity and an important aftertaste of marasca cherry in alcohol.
Overall, the wine is balanced.
Serve at 15 ° in fairly large red wine glasses.
It goes well with medium-aged cheeses like pecorino or with dishes such as larded pork rolls cooked in a pan with tomato and black pepper.
